The Montmorency cherry, often called Montmorency cherry, is a traditional variety of Prunus cerasus. Recognizable by its bright color and its tail which can be short or long depending on the sub-variety, this cherry is appreciated for its very thin envelope, tender flesh and slightly acidic juice. Native to the picturesque regions around the Montmorency forest, this variety has been cultivated since the eighteenth century, particularly in the communes of Soisy-sous-Montmorency and Saint-Prix.
Use and processing:
The cherries of the Montmorency cherry tree are traditionally transformed into jams, preserved by pasteurization, or used in the manufacture of brandy. In North America, they are also popular for the production of juices and pies. They should be harvested with their tails for better preservation.
Advantages and particularities:
In addition to its unique taste, the Montmorency Cherry is also known for its beneficial properties due to its richness in anthocyanins. These compounds are studied for their antioxidant and anti-inflammatory effects. Cherry is also famous for its resistance to change, offering a consistency and sweetness that make it ideal for both fresh consumption and confectionery.
Growing conditions:
The Montmorency cherry prefers well-drained soils and a sunny exposure, typical of temperate climates. Trees require little maintenance once established, but special attention should be paid to water management and bird protection during the flowering and fruiting season.
Why choose this variety?
Choosing the Montmorency Cherry Tree means opting for a variety with a rich history and a confirmed taste value. Perfect for gardeners looking to grow fruit with diverse culinary history and uses, it remains a top choice for lovers of traditional and authentic cherries.
