All about the Xapata Cherry Tree

The Xapata cherry tree, also known as “Chapata”, is an emblematic variety originating from the Basque Country and more precisely from the village of Itxassou (64). This traditional guigne is part of the Basque fruit heritage and is particularly appreciated for its exceptional flavour and quick fruiting. It is one of the most representative cherries of Basque gastronomy, used in particular in the making of the famous Itxassou cherry jam.

Characteristics of the Xapata Cherry Tree

The Xapata cherry tree is distinguished by a characteristic umbrella-shaped habit, with a medium vigour that makes it easy to manage. Its very early flowering produces delicate white flowers, grouped in short clusters mainly at the tips of the branches, usually appearing before the foliage.

The fruits are small in size (about 4 grams) and have a heart-shaped shape with a slight flat around the dorsal groove. The skin, thin and shiny, is vermilion on a yellow background, intensifying in the sun. The flesh is clear, tender and particularly juicy, offering a very sweet flavor with a slight acidity that perfectly balances the taste. The juice is colourless and the small and rounded pit is easily detached from the flesh.

Cultivation and maintenance

The Xapata cherry tree adapts well to the climates of the Southwest and has several advantages for the home gardener. It is particularly known for its good resistance to fruit bursting even in wet conditions, which is a considerable asset for a cherry variety. He also shows less susceptibility to monilia, a common fungal disease of stone fruit trees.

To optimize its production, it is recommended to combine it with other medium-flowering varieties such as the Burlat Cherry or the Napoleon Cherry. It is a quick fruit set, which allows you to enjoy its delicious cherries shortly after planting.

Culinary Uses

Xapata cherries are versatile in the kitchen. They are excellent for fresh consumption thanks to their juicy flesh and balanced sweet taste. They are also the basis of the famous Itxassou black cherry jam, an emblematic product of Basque gastronomy. Their colourless juice and flavour lend themselves perfectly to maceration in alcohol to make artisanal liqueurs such as Basque Patxaran.
